                                                        Violet Jelly

  1.  2 cups violets ( viola odorata)- rinse an d remove all green elements.
  2. 2 cups boiling water
  3. juice from one lemon
  4. 1 package powered pectin
  5.  4 cups sugar

1. place the flowers in a jar with boiling water. Put cover on jar and leave to infuse for 24 hrs.
2. strain flowers out of the water and pour violet water into sauce pan.
3 add lemon juice and pack of pectin 2 cups strained violet water.
4. bring to boil add four cups of sugar , boil one more minute.
5.remove from the heat into pre- sterilized jars.  store in fridge up to 3 weeks.


 note - jelly will be pink ... great on English muffins and muffins etc....
